Most of a pepper’s heat is concentrated in the seeds and veins. To minimize the habaneros’ fiery properties, we remove those before use. This brings out the stone fruit flavors of peach and mango in the pepper flesh, leaving just enough heat in the beer to hook you on the next sip.
